Herb & Feta Kale Salad
This salad is so understated and just so good! It’s light and zingy making it perfect for summer. There’s also really nothing to it. All of the flavor comes from the herbs, lemon juice, and zingy red onion and feta.
Don’t fret about the feta! I never was much of a fan, but it’s slowly growing on me and now I really am starting to enjoy it with all of the Mediterranean foods I’ve been enjoying lately.
One more note I need to add.. About kale. I’ve traditionally hated it, but it too, is making it’s way into my rotation. It’s very necessary to “massage” the kale with olive oil and/or lemon juice before eating to take a bit of the bitter bite off.

Herb & Feta Kale Salad

Ingredients
- 2 handfuls kale
- 1 handful arugula
- ¼ C. chopped parsley
- ¼ C. chopped dill
- ¼ C. good quality olive oil
- 1 lemon, juiced
- 3 T. white sesame seeds
- ½ red onion, sliced thin
- ½ C. crumbled feta
- Salt & Pepper, to taste
Instructions
- Add the kale and arugula to a large bowl. Add the olive oil on top and massage well into the greens.
- Add the herbs and lemon juice and mix again.
- Add salt & pepper and check seasonings. Add more if needed.
- 4Add sesame seeds, red onion, feta, and mix just to combine.
