Shrimp Ceviche
Shrimp Ceviche: ceviche is a light and fresh dish originating from South America that includes marinating raw fish in citrus juices, vegetables usually including onions, and herbs.

This is anotha one from Nonnie’s arsenal of tried-and-true EASY recipes. We use frozen, cooked shrimp which makes this not quite a traditional raw fish ceviche. But, we live in Kansas so.. froze is fine by me.

With very minimal work, all you need to do is thaw the shrimp according to the package, then chop them up. Chop the veggies and cilantro, throw all of it together with the shrimp in a big bowl, and pour the Bloody Mary mix on top! That’s it. You can adjust the level of heat my adding more or less jalapeno. My mom likes hers screaming, but she knows we will all be screaming AT HER if she makes things to her heat preference. Start with HALF of one seeded, jalapeno and go from there. One full jalapeno is too much heat for me.
So fresh, simple, clean, and addictive.

Shrimp Ceviche
Ingredients
- 12 large frozen, cooked shrimp, chopped
- 3 celery ribs, diced
- 1 large cucumber or 2-3 small, diced
- 1 red bell pepper, diced
- 1 handful Cilantro, chopped (stems are fine!)
- 1 jalapeño, seeded & diced
- 1 small red onion, finely diced
- 1 bottle Bloody Mary Mix or V8 mix Garnish with limes
Instructions
- Follow the directions on the bag to thaw the shrimp. Then chop the shrimp and add to a large bowl.
- Chop all vegetables, add to the bowl, and then pour the Bloody Mary mix in.
- This is best if it sits, covered, in the fridge for a couple hours or overnight before eating.
- Top with additional cilantro if you wish.
- Serve with tortilla chips or eat right out of the bowl with a spoon!
