Shallot Aioli
My current favorite condiment.

Shallot Aioli
A delicious zingy mayonnaise-based sauce that I highly recommend putting on your next grilled cheese sandwich.

Ingredients
- 2 medium shallots
- 1 garlic clove
- ½ C. mayo
- 2 T. good quality olive oil
- 2 T. Dijon mustard
- ½ tsp. salt
Instructions
- In a small blender or food processer, pulse the shallots a couple of times to chop.
- Add the rest of the ingredients until creamy, well combined, and there are no large chunks of shallots.
- Cover and refrigerate for 30+ minutes for best results. Stir before serving.
