The perfect grilled cheese oozing with cheese and happiness.

Ingredients

  • 4 slices sourdough bread
  • 1 stick salted good quality butter, preferably European
  • 2-3 layers of 2/3 different types of cheeses, shredded or thinly sliced: cheddar, white cheddar, swiss, gruyere, Havarti, mozzarella

Instructions

  1. Heat a skillet or grill pan over medium-high heat. Reduce heat to medium once pan is very hot.
  2. Butter one side of each slice of bread and add to heated pan, butter side down.
  3. Add a layer of shallot aioli, or any other condiment, to one piece of bread after laying the bread butter side down. Layer with cheese.
  4. Watch the bread but don't flip until the cheese has started to melt and the bread is browned to your liking, 5-7 minutes on the first side and 4-5 minutes on the second.
