Cold Day Eats: Grilled Cheese & Tomato Soup
Grilled cheese and tomato soup, it’s like Bert & Ernie. Bonnie & Clyde. They just go together… It just works.
Jacob had been asking for grilled cheese for a couple of weeks and I really wanted the tomato soup to go along with it. “I don’t need tomato soup, just the sandwich is fine”. But I wanted the soup. And I didn’t want to make an entire pot for myself…
So when my mom invited my sister and I to lunch earlier this week, I jumped on the opportunity to fulfill my craving. I knew my mom would appreciate a good tomato soup. My sister, well she’s a little bit like Jacob in the food department, but she’s growing up. Even she loved this soup…..
The key is to heavily impress your crowd with a grilled cheese that is so good, that they kind of lose perception of reality. It’s easy. I’ve shared my fail-proof grilled cheese recipe here and it’s so easy I don’t know why we don’t make them more. Who cares if there is like 1,000 calories in one sammy?
Start with good quality bread like sourdough or a thick multi-grain. You need good variety of cheeses that melt well, like cheddar, mozzarella, havarti, gruyere, white cheddar, Swiss… And you want at least two (maybe 3) different kinds! And lots of it. I’m of the belief that there really can’t be too much cheese, ever. Butter your bread coast-to-coast meaning don’t have a single square inch of bread that isn’t buttered before you grill those bad boys.
Don’t forget the condiments!! I’m a big fan of putting basil pesto or other saucy additives on my grilled cheese. I made this shallot aioli and slathered it all over the bread (butter side down on the grill) before adding my mountain of cheeses.
